In restaurants, shops, and any situation needing politeness, Aș vrea is your go-to phrase. It's the conditional ("would") of a vrea (to want), making it softer than the direct Vreau (I want). Vreau o cafea sounds blunt; Aș vrea o cafea, vă rog is what a Romanian would actually say to a waiter.

The full conditional paradigm is aș, ai, ar, am, ați, ar + a special verb form (technically the short infinitive). For now, just memorize aș vrea as a fixed polite formula. You can plug in nouns (aș vrea o cafea, aș vrea o supă) or verbs (aș vrea să plec, aș vrea să mănânc).
